Industry experts say a mustard seed shortage is driving up prices and could leave some store shelves with little supply before the new harvest hits markets in the fall.

France, the world’s biggest consumer of mustard, is already facing shortages. Meanwhile, other countries are witnessing a noticeable spike in prices as last year’s mustard seed stocks continue to be rapidly depleted.

The primary problem is a drop in the acreage of mustard seed planted last year on the Canadian Prairies, where a vast majority of the world’s supply is harvested. A severe summer drought also impacted on lower than usual crop yields.

In just one example of how prices have skyrocketed: Brown mustard seeds, used in Dijon-style mustard, cost more than $182 per hundredweight earlier this month, compared to $45 a year ago.
